1/2 Onion chopped
4 tablespoon Margarine melted
2 tablespoon Flour
2 cup Milk
1 cup Half-and-half cream
5 cup Water
1 teaspoon Salt
1 pinch Pepper
4 Coriander sprigs
2 Avocado

Melt margarine and add onion, until onions are glazed.

Add flour, milk, salt and pepper, and coriander.

Blend together, adding water, cream, and avocado.

Reheat, season to taste and pour into bowl and refrigerate. Serve very cold with salt crackers.

8 medium portabello mushrooms
2 stalks celery (optional)
1 oz. fresh basil leaves
1/4 oz. fresh thyme
2 small roma tomatoes
1 cup jack cheese to taste
1 lb. lean ground beef – cooked and drained
1 tablespoon Ginger roots grated fresh
1 medium shallot
1 pinch black pepper
2 tablespoon sesame seeds – tbs. toasted
4 oz. baby spinach leaves
1/4 cup EV Olive Oil

Remove stems from the caps, remove dirty end then chop the stems and put them into a bowl. Take the caps and oil the outside with additional Olive or Grapeseed oil and place on to plates.

Chop all other ingredients and add to chopped portabello stems.

Mix well and stuff into oiled caps.

Grill for about 10 minutes, turning once

Serve with a light spray of Soy Sauce and salt to taste.

2 tablespoons lemon juice
2 tablespoons freshly grated onion
2 tablespoons teriyaki sauce
1 tablespoon white sugar
1 tablespoon olive oil
1 tablespoon fresh grated lemon peel
2 teaspoons paprika
1 teaspoon crushed garlic
2 teaspoons Morton’s TenderQuik (salt with meat cure)
1 teaspoon freshly ground black pepper
1/2 teaspoon liquid smoke
1/4 teaspoon Tabasco
1 pound ground turkey
Salt to sprinkle

Mix all ingredients together with the exception of ground meat. Be sure to use curing salt or add a bit of sausage cure to the mix. At the low temperatures this is dried at you can grow “bad things” in the meat unless there some cure in the mix. Allow the ingredients at least 15 minutes for flavors to blend. Add ground meat.

Marinate at least one hour (Overnight is better). For longer marinating time, place in the refrigerator in a covered container or in an air-tight plastic bag.

Remove from marinade container. Form into shapes with a pastry bag or “Jerky Shooter” (They look kind of like a caulking gun). Sprinkle a little extra salt (and some red pepper if you like) on top of the jerky while it is still moist.

I run mine in a dehydrator where about 8 hours seems to give a nice leathery consistancy. Then move it to a 200 degree (F) oven for 20-30 minutes to assure it’s done. Alternatively you can put it in a 150 degree oven but keep the door open a bit to let moist air circulate out. Check the product every hour or so. What you’re trying for is a firm leathery consistancy, NOT board hard crispy.

Nasi Kebuli

Ada yang bilang nasi kebuli adalah masakan khas arab, tetapi yang jelas masakan nasi yang satu ini memang nikmat. Biasanya masakan nasi yang satu ini digunakan pada acara ulang tahun atau acara pesta tradisional.

Bahan :
1 kg beras
1/2 kg daging kaming yang masih ada tulang
2 sdm kismis
3 sdm bawang goreng
1 sdt garam
1 batang kayu manis
3 butir cengkeh
1/2 sdt pala halus
2 buah kapulaga
2 batang serai, memarkan
4 lembar daun jeruk
2 lembar daun salam
1500 cc santan sedang kental
minyak goreng secukupnya

Bumbu dihaluskan :
4 siung bawang putih
8 siung bawang merah
1 sdm ketumbar
1 sdt jintan
1/2 sdt adas manis
4 cm kunyit
2 cm jahe
1 sdm garam

Cara membuat :

  • Tumis bumbu yang dihaluskan beserta kayu manis, cengkeh, pala, kapulaga, serai, daun jeruk, daun salam, hingga matang.
  • Masukkan daging kambing, masak hingga daging berubah warna, masukkan beras.
  • Tumis beserta bumbu hingga harum.
  • Masukkan kismis dan santan, kecilkan api, masak hingga kaldu habis.
  • Kukus sampai matang, lebih kurang 45 menit, angkat.
  • Sajikan dengan bawang goreng.

Baronang Bakar

Bahan  :

5 ekor ikan baronang
1 bh jeruk nipis
2 ikat daun kemangi

Bahan Sambal (haluskan) :
1 sdm garam
5 bh cabe rawit
1/4 sdt terasi matang atau dibakar
10 bh tomat sayur
2 sdm kecap manis

Cara Membuat :
Bakar ikan hingga matang, angkat.
Siram dengan bahan sambal yang sudah dihaluskan.

Kue Tongkat

BAHAN :
Kue
270 gram mentega
150 gram tepung gula
2 kuning telur
1 putih telur
320 gram tepung terigu
10 gram kenari cincang halus
vanili secukupnya
2 buah jeruk lemon diambil kulitnya, parut
2 sdm air jeruk lemon
ceri merah dan hijau secukupnya

Glasur
1 putih telur
150 gram gula halus
1 buah jeruk nipis ambil airnya

CARA MEMBUAT :

  • Kocok mentega bersama gula halus hingga lembut. Tambahkan kuning dan putih telur lalu kocok lagi.
  • Masukkan tepung terigu, kenari, dan vanili. Aduk rata, lalu masukkan kulit jeruk dan air jeruk lemon. Aduk rata.
  • Masukkan adonan dalam kantong penyemprot, lalu semprot bentuk tongkat di atas loyang yang sudah diolesi maragarin. Oven hingga matang
  • Setelah dingin. Olesi tongkat dengan glasur. Hias dengan ceri merah dan hijau.
  • Untuk glasur: kocok putih telur hingga agak berbusa. Tambahkan gula halus sedikit demi sedikit. Masukkan jeruk nipis sambil terus dikocok hingga kental.

Kue Kering Cokelat

BAHAN :
150 gr mentega
75 gr gula halus
1 butir telur
1 sdt vanili
1/2 sdt soda kue
100 gr kacang cincang
225 gr terigu
25 gram cokelat bubuk, diayak

CARA MEMBUAT :

  • Kocok mentega, gula halus, vanili, soda kue, dan telur hingga lembut.
  • Tambahkan terigu dan cokelat bubuk, masukkan kacang cincang. Aduk rata.
  • Cetak kue dengan cetakan.
  • Panggang pada oven 170C sampai matang.

Kue Bolu Panggang

BAHAN :
2 butir telur
100 gr gula pasir
1/4 sdt soda kue
1/4 sdt vanili
100 gr tepung terigu
2 sdm mentega, cairkan

CARA MEMBUAT :

  • Kocok telur, gula dan vanili sampai kental
  • Masukkan soda kue, tepung terigu. Aduk rata.
  • Masukkan mentega cair. Aduk rata.
  • Masukkan ke dalam cetakan kue bolu.
  • Panggan dalam oven 180C, sekitar 10 menit atau sampai matang.
  • Angkat dan sajikan.

Ayam Bakar Rica Rica

BAHAN :
1 ekor ayam kampung, potong ukuran sedang
800 cc air
1 sdt garam
1 sdt air jeruk nipis
2 sdm minyak, untuk tumis
3 cm jahe, memarkan
5 lbr daun jeruk

Bumbu, haluskan :
10 cabe merah
10 cabe rawit merah
6 bawang merah
1 bh tomat merah, iris
1 sdt merica
garam secukupnya
gula pasir secukupnya

CARA MEMBUAT :
Lumuri ayam dengan garam dan air jeruk, diamkan 10 menit.
Tumis bumbu halus hingga harum, tambahkan daun jeruk, jahe dan ayam.
Tambahkan air, masak hingga bumbu meresap dan ayam lunak lebih kurang 30 menit.
Angkat ayam, lalu bakar sambil sesekali dielesi dengan sisa bumbu.
Ayam bakar siap dinikmati bersama dengan nasi hangat.

Resep Kue Satu

BAHAN :
200 gram kacang hijau, disangrai, kupas kulitnya
175 gram gula halus
2 sendok makan air
1/4 sendok teh essence vanili

CARA MEMBUAT :

  • Kacang hijau sangrai dihaluskan dengan blender.
  • Campur dengan gula halus, vanili, air. Aduk rata. Ayak.
  • Cetak padatkan di cetakan kue satu.
  • Oven 150 derajat Celsius sampai kering.
